| Cherry tomatoes, assorted colours | 10 |
| Olive oil | 1 tsp |
| Everyday Favourites cracked black peppercorn | to season |
| Fresh mint leaves (optional) | 1-2 sprigs of |
| New York Bakery Co. wholemeal bagel | 1 |
| Baby leaf salad, to serve | 1 handful |
| Olive oil, to serve | 1 tsp |
| Fresh lemon, to serve | 0.25 |
Method

- Cut the cherry tomatoes in half and place in a small bowl. Toss with one teaspoon of olive oil, season to taste and then set aside until ready to use.
- Cut the bagel in half and spread both sides with Philadelphia. Next arrange the dressed cherry tomatoes on top, seasoning with black pepper and a small sprinkling of finely chopped mint. Serve immediately with a side of salad, quickly dressed in a teaspoon of olive oil and a squeeze of fresh lemon.
