Ingredients
- Philadelphia original 30g
- Cherry tomatoes, assorted colours 10
- Olive oil 1 tsp
- Everyday Favourites cracked black peppercorn to season
- Fresh mint leaves (optional) 1-2 sprigs of
- New York Bakery Co. wholemeal bagel 1
- Baby leaf salad, to serve 1 handful
- Olive oil, to serve 1 tsp
- Fresh lemon, to serve 0.25
Method

- Cut the cherry tomatoes in half and place in a small bowl. Toss with one teaspoon of olive oil, season to taste and then set aside until ready to use.
- Cut the bagel in half and spread both sides with Philadelphia. Next arrange the dressed cherry tomatoes on top, seasoning with black pepper and a small sprinkling of finely chopped mint. Serve immediately with a side of salad, quickly dressed in a teaspoon of olive oil and a squeeze of fresh lemon.
