Finely shredded red cabbage 25g
Roast sweet potato 30g
Spinach leaves 12g
Sweetcorn kernels 10g
Grated carrot 25g
Coriander pesto 35g

How to make the coriander pesto: Ingredients:
  • 100g fresh coriander leaves and first inch of stalks
  • 1 garlic clove
  • A good pinch of sea salt
  • 50g extra virgin olive oil
  • 10g lime juice
  • 24g walnuts or pecans – chopped
  1. Put all the ingredients into a food processor and blitz until smooth.
