- Finely shredded red cabbage 25g
- Roast sweet potato 30g
- Spinach leaves 12g
- Sweetcorn kernels 10g
- Grated carrot 25g
- Coriander pesto 35g

- Smear a beetroot & chia wrap with the coriander pesto.
- Pile in the brightly coloured vegetables and roll up burrito style. Simple - delicious.
- 100g fresh coriander leaves and first inch of stalks
- 1 garlic clove
- A good pinch of sea salt
- 50g extra virgin olive oil
- 10g lime juice
- 24g walnuts or pecans – chopped
- Put all the ingredients into a food processor and blitz until smooth.
