Ingredients

  • Finely shredded red cabbage 25g
  • Roast sweet potato 30g
  • Spinach leaves 12g
  • Sweetcorn kernels 10g
  • Grated carrot 25g
  • Coriander pesto 35g

  1. Smear a beetroot & chia wrap with the coriander pesto.
  2. Pile in the brightly coloured vegetables and roll up burrito style.  Simple - delicious.
How to make the coriander pesto: Ingredients:
  • 100g fresh coriander leaves and first inch of stalks
  • 1 garlic clove
  • A good pinch of sea salt
  • 50g extra virgin olive oil
  • 10g lime juice
  • 24g walnuts or pecans – chopped
Method: 
  1. Put all the ingredients into a food processor and blitz until smooth.
