Ingredients
- Farmstead diced chicken 2kg
- Major Caribbean jerk mari-base 380ml
- Middleton’s gluten free batter mix 500g
- Schweppes ginger beer 600ml
- Everyday Favourites mayonnaise 350ml
- Boiron mango purée 200ml
Method
- Mix the diced chicken with 200ml of the jerk Mari base and set to one side covered in the fridge for about an hour.
- Mix the batter with the ginger beer and leave to rest.
- Mix the remainder of the jerk base with the mayonnaise & mango purée and place into the fridge.
- Once the chicken is sufficiently marinated coat with batter and fry in small batches until all the chicken is cooked.
- Serve with lime wedges and the jerk mango mayonnaise.
