Ingredients
| Farmstead diced chicken | 2kg |
| Major Caribbean jerk mari-base | 380ml |
| Middleton’s gluten free batter mix | 500g |
| Schweppes ginger beer | 600ml |
| Everyday Favourites mayonnaise | 350ml |
| Boiron mango purée | 200ml |
Method
- Mix the diced chicken with 200ml of the jerk Mari base and set to one side covered in the fridge for about an hour.
- Mix the batter with the ginger beer and leave to rest.
- Mix the remainder of the jerk base with the mayonnaise & mango purée and place into the fridge.
- Once the chicken is sufficiently marinated coat with batter and fry in small batches until all the chicken is cooked.
- Serve with lime wedges and the jerk mango mayonnaise.
