Ingredients
Mixed heritage tomatoes, sliced | 2kg |
Semi-dried tomatoes | 200g |
Extra virgin olive oil | 100ml |
Lemon, juiced | 1 |
Burrata | 10 |
Basil pesto | 400g |
Basil | 20g |
Method
- Plate the tomatoes on your desired plate
- Drizzle with the oil and lemon juice and finish with cracked black pepper
- Place the burrata in the centre and drizzle with pesto and fresh basil
