Ingredients
| Olive and rosemary dough sticks | 1 |
| Olive oil | 20ml |
| Casa De Mare sea salt | 0.2g |
| Everyday Favourites honey & mustard dressing | 30ml |
| Little & Cull Ham Hock & Piccalilli Terrine | 75g |
| Golden pickled cauliflower | 30g |
| Spiced candied seeds | 5g |
| Watercress | 3g |
| Micro red amaranth | 1g |
Method
- Prepare the bread: Slice the dough sticks lengthways, drizzle with olive oil and sea salt, then bake until crispy (for 5–6 minutes).
- Dress the plate: Spoon the honey and mustard dressing onto the plate.
- Assemble: Place a slice of ham hock and piccalilli terrine on the plate, then top with golden pickled cauliflower, spiced candied seeds, watercress, and micro red amaranth.
- Finish: Drizzle with a little more olive oil before serving.
