Ham hock and piccalilli terrine

A rustic terrine of ham hock and piccalilli, served with golden pickled cauliflower, candied seeds, and fresh herbs. Finished with honey and mustard dressing and crispy grilled breads for a vibrant, flavour packed starter.

Ingredients

Olive and rosemary dough sticks 1
Olive oil 20ml
Casa De Mare sea salt 0.2g
Everyday Favourites honey & mustard dressing 30ml
Little & Cull Ham Hock & Piccalilli Terrine 75g
Golden pickled cauliflower 30g
Spiced candied seeds 5g
Watercress 3g
Micro red amaranth 1g

Method

  1. Prepare the bread: Slice the dough sticks lengthways, drizzle with olive oil and sea salt, then bake until crispy (for 5–6 minutes).
  2. Dress the plate: Spoon the honey and mustard dressing onto the plate.
  3. Assemble: Place a slice of ham hock and piccalilli terrine on the plate, then top with golden pickled cauliflower, spiced candied seeds, watercress, and micro red amaranth.
  4. Finish: Drizzle with a little more olive oil before serving.
