Grilled chimichurri chicken thighs with red peppers and onions

Ingredients

  • Farmstead chicken thigh boneless skinless 80-100g 30
  • Cuban chimichurri paste 280g
  • Red pepper wedges 30 pieces
  • Red onion wedges 30 pieces
  • Pure olive oil 80ml
  • Everyday Favourites crushed chillies 2g
  • Everyday Favourites paprika 8g

Method

  1. Place the chicken thighs into a bowl and add the chimichurri paste, red pepper wedges, red onion wedges, olive oil, crushed chillies and paprika then mix together and marinate for one hour.
  2. Once marinated skewer all the ingredients and place onto the chargrill until the chicken is cooked.
  3. Serve with mixed cabbage slaw and flat breads of your choice.
