Greenyard edamame hummus with coriander

Edamame beans 350g
Garlic cloves, crushed 3
Tahini 120g
Water 100ml
Coriander leaves, roughly chopped (reserve a few leaves for garnishing) 1 bunch
Juice of 3 lemons
Olive oil 3 tbsp
Everyday Favourites salt 1 tsp
Cumin 1 tsp

  1. Bring a pan of water to the boil and cook the edamame beans to packet instructions. Once cooked, place into a bowl of iced water to cool. This will also stop the edamame beans from cooking further.
  2. Place edamame beans into a food processor along with all other ingredients and blend until smooth.
  3. Empty into a bowl and drizzle with olive oil and sprinkle with freshly chopped coriander. Serve with vegetable crudites and crackers to dip.
