Ingredients
- Edamame beans 350g
- Garlic cloves, crushed 3
- Tahini 120g
- Water 100ml
- Coriander leaves, roughly chopped (reserve a few leaves for garnishing) 1 bunch
- Juice of 3 lemons
- Olive oil 3 tbsp
- Everyday Favourites salt 1 tsp
- Cumin 1 tsp

- Bring a pan of water to the boil and cook the edamame beans to packet instructions. Once cooked, place into a bowl of iced water to cool. This will also stop the edamame beans from cooking further.
- Place edamame beans into a food processor along with all other ingredients and blend until smooth.
- Empty into a bowl and drizzle with olive oil and sprinkle with freshly chopped coriander. Serve with vegetable crudites and crackers to dip.
