Greenyard Caribbean rice

Ingredients

  • Coconut milk 200g
  • Vegetable stock 100ml
  • Chilli pepper diced 1/2 tsp
  • Thyme 1 tbsp
  • Oregano 1 tsp
  • Crushed dried chilli 1 tsp
  • Greenyard boiled rice (frozen) 600g
  • Black beans 400g
  • Everyday Favourites salt
  • Everyday Favourites pepper

Method

  1. Bring the coconut milk, vegetable broth and spices to a boil.
  2. When boiling add the rice
  3. When hot, add the black beans and heat through.
  4. Season to taste with salt and pepper.
