Glorious grain scampi po’ boy

An irresistible Louisiana-style po' boy sandwich filled with scampi dressed in a Cajun remoulade, green salad leaves, heritage tomatoes and served with sweet potato fries.

Ingredients

  • Scampi 12 pieces
  • Baby spinach 20g
  • Chopped tomato 400g
  • Rocket baby leaf 30g
  • Fresh curly parsley 20g
  • Fresh watercress 30g
  • White garlic string 10g
  • Lemons Half lemon
  • Sweet potato fries 300g
  • Mixed tomato varieties 100g

Method

Method:
  1. Cajun remoulade - Place the Cajun spice in a dry frying pan and lightly toast till well heated through. Mix together the mayo, horseradish, half the Cajun spice, minced garlic, mustard, lemon juice, hot sauce, and Worcestershire sauce.
  2. Slice the tomatoes, prep the leaves and mix.
  3. Bake the baguette.
  4. Deep fry the scampi and the fries, toss in the remaining Cajun spice.
  5. Cut the baguette in half, then slice the baguette lengthways ready to fill. Spread oven the Cajun remoulade. Build with the sliced tomatoes, lettuce and scampi.
  6. Serve with the sweet potato fries.
