Everyday favourites cheddar and broccoli crustless quiche

Made with broccoli, caramelised onion, Everyday Favourites Cheddar cheese and eggs. A simple, light and low carb meal for a brunch or lunch!

Everyday Favourites salted butter 20g
Onion, diced 1
Broccoli, cut into small florets 100g
Milk 180ml
Everyday Favourites free-range eggs 1
Everyday Favourites Cheddar, grated 100g

  1. Preheat the oven to 180ºC/350F/Gas 4.
  2. Heat a frying pan until hot. Add the butter and onions and cook until caramelised and golden-brown. Set aside.
  3. Boil a pan of water and carefully add the broccoli. Blanch for a minute or two.
  4. Cool down and mix with the caramelised onion.
  5. Scatter over the bottom of a heat-resistant glass dish.
  6. Whisk the milk and eggs in a bowl and season.
  7. Add about half of the grated cheddar cheese and mix together again.
  8. Pour the mixture over the vegetables in the dish.
  9. Scatter the remaining grated cheddar over the top of the mix.
  10. Bake in the oven for 35-40 minutes until bubbling and set.
  11. Cool slightly before serving or can be chilled and eaten cold.
  12. Add a green salad, for serving.
