Eaton mess cheesecake

Vanilla cheesecake 1
Double cream 1 litre
Caster sugar 50g
Strawberries, chopped 200g
Raspberries, chopped 100g
Meringues 80g
Strawberry purée 100ml
Viola flowers 5g


  1. Defrost the cheesecake
  2. Whip the cream and add the sugar then fold through 1/4 of chopped strawberries and raspberries then 1/4 of the meringues (gently crushing them ) - add 1/4 of the puree and swirl through.
  3. Top the cheesecake and finish with whole meringues, sliced strawberries and a drizzle of sauce
  4. Finish with the flowers
