Delifrance chunky chocolate cookies

    Stale chocolate buns 300g
    Light brown sugar 80g
    Sugar 50g
    Butter, softened 100g
    Everyday Favourites free range medium egg 20g
    Chocolate chunks 150g
    For the icing
    Egg white 20g
    Sugar 100g
    Lemon juice 5 drops

    1. Cut the croissants into pieces and pour into the mixer bowl. Mix with the two types of sugar until the mixture resembles breadcrumbs.
    2. Add the softened butter and the egg, and mix to a firm dough.
    3. Then add the chocolate chunks.
    4. Shape into a log around 6cm in diameter and chill for one hour.
    5. Cut into slices around 1cm thick and place on a baking sheet.
    6. Bake for 8 mins at 170°C.
    7. For the icing: Whisk all the ingredients together, until you reach medium firm consistency.
    8. Using a paper cone fill entire surface with royal icing.
    9. Decorate with pink and white heart-shaped sprinkles.
