Aubergine boats

These delicious Neapolitan stuffed aubergines make a tasty starter or serve with salad and some good crusty bread as a lunch, what’s more vegetarians will love them!

  • Aubergines 4
  • Olive oil 6 tbsps
  • Garlic clove, peeled and crushed 1
  • Cirio chopped tomatoes 400g
  • Capers 2 tbsps
  • Pitted black olives 50g
  • Small bunch of basil, roughly torn 1
  • 125g balls mozzarella cheese, sliced 2
  • Extra virgin olive oil to serve
