Everyday Favourites Cheddar-loaded jacket potatoes

Here’s the perfect everyday favourite dish for Autumn...and it takes no time at all to prepare. A warming baked potato loaded with scrumptious flavours and lots and lots of delicious grated Cheddar, then topped with a splash of real colour. Almost too tempting for words!

Ingredients

Large baking potatoes 4
Sour cream 60g
Everyday Favourites butter 60g
Chives, chopped 5g
Spring onions, sliced thinly with green and white slices separated 2
Everyday Favourites grated Cheddar 75g
Crispy bacon slices, broken into small pieces 6
Red pepper, deseeded and chopped into small cubes ½

  1. Preheat oven to 200°C.
  2. With a fork, prick the potatoes all over. Wrap tightly in foil then bake for one hour or until soft.
  3. Discard the foil and make a lengthwise slit along the top of each baked potato, making sure not to cut all the way through.
  4. Carefully scoop out the softened potato, place in a basin or bowl, add the sour cream, butter, chopped chives, slices of white spring onion, half the Everyday Favourites grated Cheddar and half the crumbled bacon, then season with salt and pepper.
  5. Spoon the mixture back into the potatoes, then sprinkle the tops with the rest of the Everyday Favourites grated Cheddar.
  6. Return the potatoes to the oven for about 5 minutes or until the cheese has melted.
  7. To serve, top with the remaining crumbled bacon, cubed red pepper and the slices of green spring onion.
