Baked potato with honey and mustard filling topped with cheese

Ingredients

Jacket potatoes 10
Everyday Favourites honey and mustard dressing 250ml
Everyday Favourites grated mozzarella mild cheddar mix 500g
Dew Valley cooked streaky bacon 180g
Chopped chives 20g
Red onions sliced 200g
Pure olive oil glass 60ml

Method

  1. Bake the jacket potatoes until tender and cooked then scoop out the inside into a large bowl
  2. Mix the honey and mustard dressing, half the grated cheese, chives and chopped cooked streaky bacon into the potato
  3. Heat a frying pan and add the red onion and oil and cook until soft then allow to cool, then add to the mix
  4. Place the potato mix back into the skins and top with the remaining cheese
  5. Place into a pre-heated oven at 180c for 10-12 minutes until golden brown
  6. Serve with salad or as an accompaniment
